2kg of beautiful Redeemer wheat flour. 13-14% protein. High extraction. Redeemer is a hard red winter wheat developed by Canadian breeders from a Serbian breeding line. It was bred about 20 years ago and would've been replaced by a new variety and never heard from again, had not Vermont USA baker Blair Marvin bought some from a local farmer to mill in the first New American stone mill built by her husband Andrew Heyn. It has since become known in the American artisan baking community as a wheat and flour with great performance and flavour. This high extraction, high protein flour is robust and flavoursome and a pleasure to work with in the bakery.
