Tritordeum is a new natural cereal borne of a cross between durum wheat and a rare wild barley, Hordeum Chilense. It mills to a striking, flavoursome flour that is yellow in colour. It is high in lutein, magnesium and iron and exhibits a nitrogen efficiency in the field surpassing many other cereals. Baking characteristics are similar to a mid protein flour. It’s a flavour bomb.
